The one thing to remember about culturing foods at home is that they’re best used continuously. To get into the habit of doing this, these foods should become important in your diet. The following are some ways to use fermented dairy foods:

Use kefir in smoothies. Try using natural sweeteners to entice your family’s taste buds. Reduce the sweetness as they become used to the flavor.

Culture your own cream into sour cream and use it in place of store-bought sour cream.

Create fresh cheese at least once a week and use it for snacks and dips, as after-school snacks, or as the first course for dinner.

Eat yogurt with fresh fruit or granola as a healthy breakfast.

Place yogurt in a cheesecloth-lined strainer and allow liquid (whey) to drain away. The resulting cheese-like product makes wonderfully rich-tasting, cream cheese–style food.
